Sorry for asking this but I can't get any of the normal colour codes to work and I can't find any info on it. So how do I add colour to the server MOTD.

for bedrock there are the same color codes as for java edition color character is '§' and the second is the color

Sorry I don't understand what you mean?
Probably it's not possible to use colors in the config

Nope here need to add a code heres a link : https://www.digminecraft.com/lists/color_list_pc.php (you need to put it in motd)
you need minecraft color codes or format codes so first get the code then do it again.
